I noted in the last post that you can make your own baking mix. It only takes a few minutes to mix up a huge batch and it doesn’t have the preservatives found in commercial baking mix. You can even make it with whole wheat flour! I’ll have to add pictures the next time I make baking mix, as my tub is currently half full.

Quick Mix Recipe (Adapted from cooks.com recipe)

3 cups all purpose flour
3 cups whole wheat flour
3 tablespoons baking powder
1 tablespoon salt
1 1/4 cups vegetable shortening (butter-flavored or plain)
  1. Mix all dry ingredients thoroughly in a large bowl.
  2. Cut in shortening with pastry blender or two knives until mixture resembles coarse corn meal. Store in a container with tight-fitting lid. The mix will keep for up to 2 months. It keeps even longer in the freezer.

Makes about 2 quarts.
