Today, we are celebrating. Jim just got offered a new job as a manager, which is fantastic. Today, nutrition is off the table. It’s a party! I decided a fancy breakfast was necessary:
The picture really doesn’t do it justice, but YUM! This was a very simple and easy breakfast, yet it tastes SO decadent and wonderful.
I used my homemade whole wheat baking mix to make delicious and healthy whole wheat waffles. All it takes is:
2c baking mix
1 1/2 c milk or water
Combine wet ingredients and add to baking mix all at once. Stir just until combined, let sit for 5 minutes. Cook with a waffle iron according to manufacturer directions.
See? Simple. We topped the waffles with strawberry freezer jam and homemade whipped cream (you can find instructions for whipped cream at the bottom of this post).
These waffles were crispy. And fluffy. And creamy. And sweet. And totally decadent and delicious. The strawberry and cream combination is to die for! I’m pretty sure the kids would eat this for breakfast every single day if I would let them.
The good thing is that I don’t have to feel TOO guilty because there aren’t any nasty ingredients.. and the waffles are whole wheat. It’s still not the ideal breakfast, but what the heck, we’re celebrating.
